I have been designing protein bars for 20 years, searching and working to deliver the best tasting bars possible. For the last 1 1/2 years, I have been working with ZoomEssence to change the way the flavoring process is done. Protein bars can deliver great nutrition, but often at the expense of taste. High protein bars create reactions over time that cause the flavor to fade. We studied the flavor reactions that occurred, we looked at how solvent systems impacted taste and we identified certain ingredients that enable us to develop unique flavors. The science behind why this happens is complicated, but we’ve all tasted products where the flavor name on the packaging did not deliver on its promise. Setting out to discover a solution to this flavor problem, the ZoomEssence team of scientists and innovators started at the molecular level.

To make it taste great, we first had to make it taste bland.

Through understanding protein cross-linking and various enzymatic reactions in the bars, we designed a flavor system to mask those reactions. Our masking flavors provide a great foundation to build upon, eliminating the “moving target” challenge in flavoring products. Then came the rest of the process; designing stable aroma and taste. Our team rose to the challenge. Each flavor has been meticulously designed to deliver the right balance of aroma and taste.
