The Zoom Essence demo that I will be talking about today is the Bar Demo. You’ll be receiving an envelope full of [inaudible 00:00:09] for the demo, a tasting kit one and a tasting kit two, as well as two envelopes. In this envelope you’ll be receiving pads of paper, some pens to write with, napkins, and scissors to open the pouches if you need to, as well as a small note from the account manager which includes business card. In the two folders, the first folder will contain tasting sheets and formulations, and they’ll be clearly marked for tasting one and tasting two. And then a folder of specification sheets, or STSs, or additional information regarding the flavors that we’re showing. And that’ll be in a separate folder here. So let’s show you how the tasting sheets will look. They will be color-coded and clearly marked. So this tasting sheet is for kit one. It matches that. Then each of the samples that you’ll be tasting will be color-coded to coordinate with your tasting sheet. So this will say one for kit one, and it’ll be green for that variable of the bar demo. You have yellow and you have blue and you have red. It’s a quick and easy setup. And then you can use your scissor to cut open the pouches if you desire. And then we’re tasting it too. Again, here are the formulations for the bars that we’re showing, and then the three different flavor profiles, all coordinating with the bars in kit two. The vanilla latte is white, raspberry is purple, and the dirty chai is brown. So we look forward to getting together with you for a demo. 3. Building Flavors that Last in Bars

Hi, I’m Starla and I’ve been making protein bars for almost 20 years. Protein bars can be very difficult to flavor. Not only do you have to work with the flavors that come from the proteins themselves, whether it be a beany note or a grainy mouth feel, or even a really strong dairy note that competes with your strawberry or with your blueberry or whatever flavor you’re trying to do, but they’re extremely reactive. So, these compounds actually can either change the way your flavor is perceived. They make the aroma disappear. They can also make the taste disappear. So, this is extremely difficult to work with and can be really frustrating for product developers.
In the past, there hasn’t been any real solution to figure that out other than to screen your proteins and screen a bunch of different flavors and to do the best you can. Well, I’m excited to tell you that the world is changing. We have decided to rebuild flavors for bars. So, Zoom has taken this amazing technology that they have for cold spray drying, and they’re applying it to flavors that have been designed to chemically work in bars. So, they don’t interact the same, they don’t block the flavors, they don’t block the aromas, and they’re just amazing to work with. So. You have full aroma and full flavor, and I’m so excited for you guys to try them.
6. Yay-It's Blueberry In A Bar

Hi, my name is Starla and I’ve been making protein bars of all different types for almost 20 years. The most difficult part of completing that protein bar to make it consumer-ready is the final flavor. Flavor is everything, taste is everything, and that includes the impact that it has in your mouth and also the impact the aroma has on you.
And traditionally, this has been really difficult because not only do the proteins give their own types of flavors, including all flavors, beany notes, dairy notes, things that might be difficult with using different types of flavors, but also those proteins are made up of amino acids that attached to those flavor compounds and can change the way you perceive them. And it also has the effect of sometimes making them seem to disappear after you’ve added them to the system. Traditionally, you just call a flavor house and you get a sample. And most of the time they just grab something off their shelf and send it to you. There has not been a company that has actually taken the time to develop flavors that work with the chemistry of the proteins in the protein bars.
Well, that’s changed and I am so excited for you to start to learn about the Zoom technology for flavors. Cool Zoom is amazing and it has created these flavors that are full of aroma and full of taste. For the first time, I actually opened my blueberry cobbler bar and I can get that fresh blueberry smell that comes up to my nose and I put it in my mouth and I’m like, “Yay. That’s blueberry”, not just because it looks purple, but because it’s actually blueberry. So I’m so excited. I hope you guys enjoy this. Please let us know what we can do to help.
7. Tasting the CoolZoom Bar Demo

When I’m working with protein bars, I always tell people, taste it, touch it, feel it. So that’s what we’re going to do right now. I really want to introduce you to the masking system that we use here at Zoom to create a flat base for our flavoring compounds. So, first we’re going to look at the dairy base. So this base is high protein, so 20 grams of protein in a 60 gram bar with one gram of sugar and very low fat. So, what we have done is just use a milk protein isolate, and a whey protein concentrate. And you can see it. You can smell it. It smells very much like a typical protein bar. So a little bit dairy, a little bit savory, not very sweet whatsoever. So now we’re going to taste it.
So we get a little bit of bitterness that comes from the protein. I also get a strong savory note from the amino acids and I get a hint of that creamy dairy piece. So that’s where we’re at with that. So now the next one I want you to taste is this dairy base that’s masked. If you smell this, you can tell that there is nothing there. It doesn’t smell like protein. None of those savory notes. It actually has this hint of sweet that you can smell it from the syrups, and no dairy is coming through whatsoever. So let’s taste it.
I remember the first time I tasted this and I was blown away because it almost has the perception that there’s added sweetener to it, and it enhances the flavors that are coming through. There is no savory notes. I can’t taste any amino acids, and I don’t get any of the bitter astringency. It’s absolutely amazing technology. It has flattened it completely. So now that we’ve tasted the dairy base, you may be thinking, well, does this work with other proteins? And absolutely. So let’s take a look at our pea protein base, and let’s smell that one. This is the one that’s unmasked. It’s also a high protein system, 20 grams of protein, low fat, one gram of sugar. Very typical pea protein. So if anybody has ever worked with pea protein, you know it smells very beany, a little bit savory, kind of earthy. And now we’ll taste it.
It is very earthy, tastes like a pea to me. I’ve always said no matter how clean they are, they always taste like a pea. But this is actually a clean flavor. It just is very proteiny and very pea. So now let’s taste the one that has the masker added to it to see if we could do a better job flavoring it. So let’s smell it. I can’t smell anything, which is really unusual because normally I can open up a package and I can smell soy protein, I can smell pea protein, I can smell dairy protein. I have this right next to my nose and I can’t smell anything. Same texture as the other bar, but I’m just getting a hint of sweet. I’m not tasting any of that characteristic earthy green pea flavor whatsoever. It’s very flat. We’re very able to go ahead and flavor on top of that.
It’s super exciting. I wish you guys were here tasting with me. So now, let’s taste some characterizing flavors because that’s great. Now we’ve created this nice flat base. What can we do with that? So, one of the hard things to do with bars is to create a fruit flavor because you already have these savory notes in it. And typically with fruit, you really get this aroma. So imagine that you open up a package of fresh strawberries and it’s sitting on your kitchen counter, you get those nice fruity notes that float up from the counter and you smell them. And they are amazing. So what if we could get that from a bar? Well, guess what? This bar that I have here in my hand has the masker in it. It’s a dairy based, so we use the masker, and then we put one single strawberry in it.
And we did not add a bunch of extra sweetener. And it smells like a fresh strawberry. Not a cooked jam, but a fresh strawberry. But does it taste that way? So let’s find out. Oh my goodness, it actually tastes like strawberry. Oh, these are amazing. It has totally changed the way that I think about flavoring protein bars. And I’m super excited about what we can do with those. Now, can I blow your mind just a little bit more? How about a coconut flavor? Coconuts can be really weird, and mix them with proteins and they can disappear. So, look what I have. This one smells like a coconut that you cut open. It has full rounded flavors. The notes in it, it smells like a tropical vacation. So how about if you taste it? Coconut right up front, and then you get that full rounded coconut to the back and no aftertaste.
It also doesn’t just drop off at the back end. So it’s absolutely amazing. I’m super excited about that. Now, I’m going to share one more thing with you what is to me one of the holy grails of flavor, and that’s a beautiful chocolate flavor. Everybody wants a chocolate bar that tastes amazing. So one of the tricks that product developers used is to add cocoa powder. That’s where most of the chocolate flavor comes from. The hard part about that is that using cocoa powder in a protein bar system takes up space, and cocoa powders can be really drying on your texture. So that makes it a challenge. So, I have challenged the team to create an amazing chocolate flavor that you don’t need any cocoa powder to come through.
So guess what? I have a couple for you to choose from. This smells like a sweet, dark chocolate, hint of floral at the back end, no protein, actually smelling chocolate. But is the flavor actually there? As you can see, no cocoa powder. It’s the same color as all the other bars. There it is. There’s my milky note. There’s my slight bitter sweet dark chocolate flavor and my hint of floral notes. It’s absolutely there. I am so excited. We are completely changing how chocolate flavors are done in protein bars. And I can’t wait for you to try them. There are so many more flavors for you to try, and I can sit here and taste them all day, but I really just want you to try them for yourself. 10. Wow Aroma In A Bar

Hi, my name is Starla. I’ve been making protein bars for a very long time, almost 20 years. Anybody who’s worked with protein knows that it is not the easiest thing to flavor. Proteins interact. They can mute the aroma and they can actually make it seem like the flavors disappear, or they give you a weird after taste or a weird note that sometimes feels like you’re getting tropical chicken broth. Ew. Anyway, I’m super excited today because I get to tell you something different. Zoom has introduced these new flavors created with new technology. We’ve worked really hard over the last year and a half to take these all the way down to the molecular level and create full-bodied, rounded flavors with full aroma. I hope you’ll give them a try.
13. Masking Unwanted Aroma in Bars

Hi, I’m Starla and I’ve been making protein bars for almost 20 years. You may have been reading the posts about these new flavors that have been created for bars from Zoom Essence. Well, I’m excited to actually show them to you today and show you that it really is different. So if you read the posts, you may know that one of the things that we’ve done is develop a masking technology that actually binds with the proteins and flattens the flavor completely out. How is that possible? Well, a little bit of magic and a whole lot of hard work at the molecular level. But as anyone knows with flavors, tasting is believing. So since you can’t be here with me, I’m going to taste them and describe them to you. So let’s start first with a high protein bar with 20 grams of protein from dairy base and milk protein isolate and whey protein isolate, no masker, no added sweetener.
So let’s take a look. So let’s first smell it. It smells like a protein bar. It’s a little bit bitter. It is a little bit savory and just a slight dairy note. So now let’s taste it. Very common protein bar flavor. There are some earthy notes, some dairy notes and some brothy notes from the amino acids. And the aftertaste is just a little bit better. Not the easiest thing to flavor so let’s see what it tastes like with the masker in it. So first let’s smell it. I really can’t smell any protein and I can usually pick out protein anywhere. What I smell is slightly sweet and slightly, maybe a little bit dairy. When I taste it, I taste no protein. All I taste is a very bland, flat, slightly sweet product. Maybe a little bit of almond butter because these have almond butter in them as their fat source, but super, super flat. So it would be really easy to flavor.
Now, that’s a dairy base. You might make plant-based bars and you want to know if that works there too. So let’s take a look. With the plant based bars you’re going to look at different types of flavors and different types of aroma. So the unflavored one and the unmasked one is also high in protein, 20 grams of protein. Let’s smell it. It smells very beanie. It also smells a little bit earthy. Now let’s taste it. I definitely taste pea protein. And then I taste an earthy after note. I mean, quite strong. I can’t imagine even trying to make a strawberry flavor go over the top of this or something other than more of an earth note, like a chocolate or something. But even then I feel like the pea flavor would come sailing through.
So now let’s see what is our miraculous masker do for that. so the first thing, let’s smell it. I don’t smell any pea. I don’t smell any earth tones and now let’s taste it. The first thing I notice is I get this really sweet note to it. The sweetness comes sailing through, and there’s a little bit of a nutty taste, but it’s very flat. There’s no pea flavor. There’s no earthy flavor. So it would be much easier to work with by adding your other characterizing flavors. So I’m super excited. I hope you actually try these. They are amazing and they’re going to change the way you flavor protein bars. Thank you.
14. Let's Talk Formulations

All right. Let’s talk about formulations. How do we come up with a way to test these flavors to make sure that they work for you? So I’ve been working with proteins for a long time and the toughest system to use is a high protein, low sugar system. So that’s what we created, and you’ll notice those on the webpage. You’ll see the formulas and you’ll see what we did. And the first thing that we did to flavor them was to take some flavor maskers and flatten out the flavor. That way we could have a clean building block to put the characterizing flavors on top. So it just makes it so much easier. And then the added bonus that you’ll find is that we can use a lot less flavor.
When I first started working with these, I was really skeptical. I wasn’t sure it was going to work because I kept using them and using them just the way I had always done. And then I backed off on my usage level by more than 10 times. So instead of putting in 1%, I put in 0.1%. And guess what? Wow. The flavors really started to come through and I was amazed. So not only did I come up with a flavor system for my bar that tasted great, that smelled great, all of a sudden I left a bunch more room in my system to add more actives, and it cost a whole lot less. So bonus points all the way around, and I’m super excited about that too, so I can’t wait for you to try it.
